We are a pie company that offers crumb cake. You may wonder why. Yes, there is a story behind it!
Many of you may not know that prior to starting Noble Pies with me, my husband Tom was a farrier. A farrier is a specialist in equine hoof care which includes trimming and balancing of horses’ hooves and the placing of shoes on their hooves. I worked with Tom for about 3 years assisting with trimming and shoeing horses. I quickly learned that the job required tremendous strength and stamina.
We burned up a lot of calories every day. As we traveled from barn to barn through Northern New Jersey we were always in search of good coffee and good carbs, especially crumb cake carbs! We never found the crumb cake or the coffee that met our expectations. We settled for mediocracy just because we needed the calories.
As Noble Pies started to become a viable business, I made a promise to myself that I would learn to make what I considered the best crumb cake. These were my requirements: 1) a moist, soft cake 2) a buttery large crumb 3) no sugar overload 4) plenty of butter, high quality. Next, I started looking for crumb cake recipes. I looked at recipes for days, or I should say studied them. Finally, I narrowed it down to three that sounded promising. One was a yeast-based crumb cake and the other two were more cake like. Since we had developed a nice customer base early on that was always willing to let me experiment on them I did just that. One busy Saturday morning I put out all three crumb cakes and asked people to taste and give me specific feedback on each one. I knew what I wanted in a crumb cake, but I had to make sure it was what our customers liked too. It turned out that our favorite was the customer’s favorite too. With just a couple of minor tweaks to the recipe our New York Style Crumb Cake was born.
