On a cold snowy day...... Meatballs

One snowy Sunday Tom and I were in the bakery and no one was coming in because the snow was quickly piling up outside. A slow time like this has always been a time for thought and inspiration for creating a new pie. I kept thinking about how delicious some spaghetti and meatballs would be for dinner. It suddenly dawned on me that it would be scrumptious in a pie. Tom got to work on his “famous” meatballs, I started the tomato sauce. This is what we came up with. Nine savory meatballs line the bottom of our all- butter crust. Next, we ladle tomato sauce over the meatballs and layer fresh Jersey Girl mozzarella over the top and cover it with a top crust. That night we brought it home, took one bite and knew a new pie was born!


And for dessert.......


I read a story about this pie in the paper years ago. It came from a woman who dared to break her family tradition of eating ricotta pie on Easter. Blossomed my own interpretation: Pineapple Ricotta Pie. Fresh Jersey Girl ricotta cheese, cream, pastured eggs, pineapple, vanilla.
